Girolomoni has succeeded in creating a pasta that is a source of fibre, with a higher mineral and vitamin content than pasta made with white flour, yet it has a more delicate flavour and aroma compared to wholemeal pasta, thanks to the recovery of the finer bran, which is not so external and remains closer to the heart of the grain.
